Luke Whearty has been well recognised for a number of years now at the forefront of forward-thinking minds in the world of bartending. His experiences have seen him travel the world and preside over some of the most progressive drinking programs to date. In recent years, Luke has contributed to Singapore’s fast-growing cocktail scene with the opening of Operation Dagger. Operation Dagger in just its first years of trade made waves around the world, and also appeared as a regular on The World’s 50 Best Bars.

Recently, Luke has returned home to Australia to open Byrdi with partner Aki Nishikura. Byrdi is a modern Australian bar taking inspiration from its surrounds and working with small local producers to create menus that are reflective of the seasons. It is at Byrdi where you will currently find Luke with his team as he continues to progress Melbourne’s vibrant cocktail culture to the next level.
