Blayne Bertoncello 

Blayne Bertoncello is the head chef and owner at O.MY in Beaconsfield, as well as the operations manager of the farm in Cardinia. His focus is on sustainable, seasonal, and closed loop cooking and farming. The 3.5-acre farm provides all the fruit, vegetables, eggs and honey that the restaurant uses and his close connections with farmers, fisheries and producers fill in the proteins. His menu changes weekly, sometimes daily, with him and his team creating a 15-20 item tasting menu that shows you a sense of time and place.
